This white wine derives from the vines “Vujnu”, “Durraca” and “Pecorello” blended during the vinification with “Trebbiano Toscano”. These vines are all exclusively cultivated in the vineyard of Boccafolle and allow the making of a wine of pale-yellow color, whose scents evoke the Riesling wines of the high valley of the river Reno.

The wine is characterized by significant acidity, light color with slight green tones and recognizable scents of alyssum, fresh fruit, quince and pear.

Terrain nature

“Terra rossa”; the soil is thin, light, rich in minerals and with a small percentage of clay which ensures the vine, even in periods of maximum drought, adequate water reserves and the right vegetative vigor. Hilly with South-West exposure

The grapes of “Donna Elena” are harvested from plants with an average age of 20 years; the extension is about 1.20 hectares

Training system

High density spurred cordon, about 5,000 plants per hectare

Dry with slight afternoon ventilation and sensitive temperature range at night

Harvest

Very early; end of August or first ten days of September

Vinification

Soft pneumatic round grain pressing; pre-fermentation racking at a temperature of 5-7 degrees C °; fermentation with selected yeasts that do not produce hydrogen sulphide in steel barrels at a controlled temperature of 14-16 degrees C °

Aging

In steel followed by a short period of rest in the bottle

Pale straw yellow with greenish reflections

Floral, primarily alysso, pear and quince, followed by genista, finally citrus notes of resin and honey
