Upper Calabria - Province of Cosenza - Mottafollone - Boccafolle farm - Plateau at about 350/400 meters above sea level at the foot of the Mula massif

Terrain nature

“Terra rossa”; the soil is thin, light, rich in minerals and with a small percentage of clay which ensures the vine adequate water reserve and the right vegetative vigor even in periods of maximum drought. Hilly with South-West exposure.

Average age

The “Melara” grapes are harvested from plants with an average age of 12 years; the extension is about 2.00 hectares

Training system

Spurred cordon with 4,500 plants per hectare.

Climate

Dry with slight afternoon ventilation and sensitive temperature range at night.

Yields of grapes per hectare

60-70 quintals.

Harvest

Early; second or third week of September.

Vinification

Soft pneumatic round grain pressing; pre-fermentation racking at a temperature of 5-7 degrees C °; fermentation with selected yeasts that do not produce hydrogen sulphide in steel barrels at a controlled temperature of 14-16 degrees C °
